In ds2 you can dual wield any 2 weapons that are same type, on example 2 spears, 2 curved swords, 2 greatswords etc. And you need 50% more stats to do it. While i can equip say, two long swords in either hand, there wont be any actual dual wield.
Curved/asian style weapons are always a good dual wield choice because they always provide a snappy, fast off hand attack, rather than the more commonly awkward, slow attacks that most other style weapons provide. Rapier with dagger main hand was mentioned by someone. This is the style i would consider if i was dex spec.

I don't know how relevant this still is to you but here is what i found in my experiences. Dual wielding can be uselful in some situations, such as having a long thrust weapon in your off hand to poke your oppoonent at range, but still keeping a shield in your secondary offhand slot to quickly switch if needed.
